SyOxy is a one-of-a-kind coffee that pushes flavor boundaries. Grown at Finca Soledad, Ecuador, by renowned producer Jose "Pepe" Jijón, this exceptional coffee is a rare Sydra varietal produced with the unique Oxidization process.
Sydra is a relatively new hybrid varietal, combining the traits of Red Bourbon and Typica varietals. It has acquired the sweetness and the body of Red Bourbon and the bright taste and acidity of Typica.
SyOxy delivers a bold and unforgettable experience, combining tart-forward brightness with a rich umami depth and balanced sweetness. Expect vibrant malic acidity intertwined with sharp cocoa notes, creating a dynamic and surprising cup experience.

ABOUT SYDRA OXIDATION PROCESS
This processing method is a variation of a washed process. First, the coffee is left to ferment aerobically in the open environment to promote an oxidated fermentation.

The coffee is then pulped and fermented in a sealed tank for 48 hours in its mucilage before being washed, then dried in both indirect and direct sunlight for 20 days.

Jose "Pepe" Jijón is the visionary behind Finca Soledad, a coffee farm nestled in Ecuador’s Intag Valley. Originally a psychologist and an accomplished mountaineer—having solo-climbed the Seven Summits—Pepe’s journey into coffee was unexpected.

After a life-changing motorcycle accident, he sought solace in nature and acquired land in Ecuador, initially planting trees for conservation. Over time, his passion for sustainability and environmental stewardship led him to specialty coffee, where he has gained global recognition for his innovative farming practices and exceptional Gesha varieties.
