ABOUT ANAEROBIC SUGAR CANE DECAF

The process begins with the manual harvest of cherries, followed by selection based on size and density to ensure quality. The cherries undergo sterilization using ozonated water and ultraviolet light to eliminate contaminants. They are then fermented for 48 hours, during which yeast (Saccharomyces pastorianus) is added to enhance the fermentation process. After fermentation, the cherries are pulped, and a second fermentation lasting 68 hours begins. During this stage, natural grain juices produced in the initial fermentation are incorporated to enrich the flavor profile.

Once fermentation is complete, the cherries are thoroughly washed and dried for 48 hours at a controlled temperature of 38°C. Finally, the product is decaffeinated using cane sugar, completing the process.
