ABOUT PARABOLIC DRYING

At Savage Coffee in Panama, Parabolic Drying is part of a meticulous and innovative post-harvest process used to enhance the flavor complexity of their Geisha coffees. It’s not just about drying—it's a carefully choreographed fermentation and drying technique that blends science, intuition, and a deep respect for terroir.

Here’s how it works:

  • Carbonic Maceration: First, ripe Geisha cherries are placed in sealed stainless steel tanks for over 100 hours. CO₂ is introduced to create an anaerobic environment, allowing the cherries to ferment slowly and absorb intense fruit and floral notes.
  • Parabolic Drying Houses: After fermentation, the cherries are transferred to multi-tiered, parabolic-shaped drying beds. These structures are designed to optimize airflow, humidity, and temperature. The cherries are gently rotated throughout the day to ensure even drying and prevent unwanted microbial activity.
  • Flavor Impact: This extended and controlled drying process—often lasting around 20 days—preserves delicate aromatics and enhances the coffee’s natural sweetness. The result is a cup bursting with vibrant fruit, floral complexity, and a silky mouthfeel.
